Pulled Pork Sliders Helping Fight MND

Recipe: Jan Daniher's Pulled Pork Sliders (Makes 8 | Prep Time: 10 mins | Cooking Time: 6 1/4 hours)

Ingredients:

  • 2 tbsp olive oil

  • 2kg Coles Australian Pork Shoulder Roast Boneless, rind removed

  • 1 tbsp ground paprika

  • 2 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp Chinese five spice

  • 3 cups (750ml) salt-reduced chicken stock

  • 1/4 cup (60ml) soy sauce

  • 2 garlic cloves, crushed

  • 1 tbsp maple syrup

  • 500g pkt Coles Kitchen Extra Creamy Coleslaw Salad Kit

  • 1 green apple, cored, cut into matchsticks

  • 8 mini brioche burger buns, split, toasted

  • Coriander sprigs (for serving)

Method:

Heat olive oil in a large frying pan over medium-high heat. Add the pork and cook until browned on all sides. Transfer pork to a slow cooker.

  1. In the same frying pan, add ground paprika, smoked paprika, ground cumin, and Chinese five spice. Cook for 30 seconds until aromatic. Add chicken stock, soy sauce, garlic, and maple syrup. Stir to combine, then pour over the pork in the slow cooker.

  2. Cover and cook on high for 6 hours (or 8 hours on low) until the pork is tender and easily falls apart. Let it rest for 15 minutes. Use two forks to shred the pork, tossing it in the sauce mixture.

  3. Prepare the Coleslaw Salad Kit according to packet directions in a large bowl. Add the matchstick-cut green apple and toss to combine.

  4. Assemble the sliders by placing the pulled pork mixture on the toasted brioche bases, followed by the Coleslaw mixture. Finish with the brioche tops.

Serve the Pulled Pork Sliders garnished with fresh coriander sprigs for an extra burst of flavour.
