This baby cucumber salad by Coles is luxurious looking without the price tag, and it tastes amazing! 🥒
Serves 2 as a snack or side
Prep 5 mins (+ 5 mins marinating time)
Ingredients
1 tbs brown sugar
1 tbs soy sauce
1 tbs rice wine vinegar
1½ tsp dried chilli flakes
1 tsp sesame seeds, toasted
250g pack Coles Australian Qukes Baby Cucumbers
Step 1
Place 1 baby cucumber on a clean work surface. Arrange a chopstick on either side. Use a small sharp knife to diagonally slice the baby cucumber down to the chopsticks at 2-3mm intervals. Turn the baby cucumber and repeat. Repeat with remaining baby cucumbers.
Step 2
Combine brown sugar, soy sauce, vinegar, chilli flakes and sesame seeds in a bowl. Stir until the sugar dissolves. Season.
Step 3
Add the baby cucumbers to the soy sauce mixture and toss to combine. Set aside for 5 mins to develop the flavours before serving.
