INGREDIENTS
1 avocado, sliced
1/2 lime, juiced
250g microwave brown rice
375g stir-fry rainbow vegetables
1/4 cup sesame seeds (to garnish)
500g simply stir-fry bulgogi beef
1 tbs vegetable oil
METHOD
Heat a large wok and batch cook the Bulgogi beef as per the packet instructions. Avoid overcrowding the pan. Remove and set beef aside and keep warm.
Toss the rainbow vegetables in lime juice in a bowl. Heat vegetable oil in the wok and stir-fry vegetables for 4 minutes.
Microwave the rice as per the packet instructions..
Assemble bowls with rice, vegetables, beef, slices of avocado and finish with sesame seeds.
